Well, I just had to throw in a Harry Potter reference. I already got a bracelet similar to this for Christmas that says “Expecto Patronum,” and I think this would be a nice addition to my collection of Harry Potter jewelry.

Make the Most of It Monday

Well, I am running a little late on my Make the Most of It Monday post, but better late than never. Today was a pretty good Monday at school and you couldn’t have asked for a prettier day. It was perfect Spring weather outside, upper 60′s and sunny! It was so nice to actually be able to take my run outside for a change. I definitely was trying to make the most of this amazing weather:) I guess I am finally coming to grips with the fact that there is no longer a chance for snow and am ready for Spring!

I am also pretty excited that our buttercups are coming up already! I can’t wait until there is enough to pick some for the house! They are my favorite flowers. By the way this is not a picture of my house, I do wish I had a field of buttercups though. That would be pretty amazing. In fact, my great-grandparents did have this field of buttercups that we always went to in the Spring to pick a million buttercups. I need to find those pictures and post them. It really was amazing!

Now that I have finished my ramblings, I hope everyone is making the most of what’s left of your Monday!

High Five for Friday!

I have been looking forward to this week’s High Five for Friday post! It has been a crazy, long week, and I am looking forward to a fun filled weekend! So, here are the highlights from the week and what I am looking forward to this weekend:)

1. Getting to play with a sweet little newborn.

Monday, I spent part of my day off holding this little man! Not a bad way to spend President’s Day:)

2. Running 8 miles!

I have a half marathon I am running in 2 weeks (I may have forgotten it was just 2 weeks away until today…) and haven’t been sticking to my training plan like I need to. So, sometimes fear is a pretty good motivator, or it works for me at least. Funny story to go with this too. When I was getting ready to leave, there was a group of these big muscled up guys drinking out of their gallon jug of water complaining they would die if they had to run a mile. I actually started laughing out loud when I overheard this conversation. I don’t guess carrying the gallon jugs of water around does a lot for your aerobic endurance:)

3. Downton Abbey Finale

Oh it was AMAZING!!! If you still haven’t watched this show do so please! It was so nice that they did tie up most of the loose ends and it ended the way I hoped it would. Now, I have to find something else to be obsessed with until next season (which isn’t until next year…sigh).

4. Half day of work on Friday!

Oh, I am so happy I only have to work until 11 tomorrow. This whole no snow business is wearing me out, and I don’t know if I’m going to make it to May 22nd! I am still holding out for a March blizzard.

…and drum roll please the most exciting part of my week is…

5. Jason Aldean and Luke Bryan Concert!!!!!!!!!!

5. Amazing Peach Blazer

I actually bought the exact same polka dot blouse at Kohl’s over the weekend and a black blazer, but this peach blazer is absolutely to die for! I am now in search of one, so I can recreate this outfit.

Okay, so basically everything about this room screams cozy. You’ve got the super comfy bed, fireplace, and look at those stacks of books! This might be my dream bedroom! It also reminds me of Anne of Green Gables for some reason.

This is actually something I had pinned a while back and ran across it last night and had to include it in my top 5. I will have to buy one of these when we have a little baby. Jack will be the best big brother ever:)

2. Mary Crawley-Downton Abbey

I am sooo obsessed with Downton Abbey! I have spent the last week and a half watching all the episodes! I think my favorite Crawley sister is Mary. This pin really exemplifies her character. She tries to hide behind this persona of being a strong, independent woman, but at times cracks under the pressure of life. You go between hating her, feeling sorry for her, then loving her flaws. If you haven’t watched any of this series, then you should drop whatever it is you are doing and go check it out!

Make the Most of It Monday

So, those of you that are regular readers, I suppose you noticed my absence last week. Well, I had a fairly busy start to the week, and just decided to take the rest of the week off instead of try to catch back up.

Why did I have a busy start to the week? Well, I am glad you asked! My best friend had her little boy, Thomas! He was born on Monday, February 13th at 3:20 am. It was the most amazing thing that I have ever been a part of. I was able to be in the room when Thomas made his grand appearance into this world, and I now understand what a miracle from God it is to give birth.

Stuffed Mushrooms

After taking a week off from blogging, I figured my first post back should be a super yummy recipe! I found this particular recipe from The Pioneer Woman. It makes a ton of mushrooms, so it is great for parties. I also have been on a mushroom eating frenzy here lately, so when I found this one I decided to try it out. This is one of those recipes where you can choose low fat ingredients and make it a little more diet friendly.

Here’s what you will need:

Cream cheese, sour cream, onion, mushrooms, bread crumbs, cheddar cheese, spinach, hot sauce

I decided to use low fat cream cheese, sour cream, and cheddar cheese to keep the calories down a little bit, and I couldn’t tell a difference. Also, the original recipe called for panko bread crumbs, and I just used plain ole bread crumbs.

Separate mushroom stems from the tops.

In a hot pan, melt 2 Tbsp of butter in a little olive oil.

Chop up 1/2 an onion and the mushroom stems. Then, add to the hot pan. Reduce the heat to medium. Let this cook until the onions are translucent. Last, add in 1/4 cup bread crumbs to the mix.

In a bowl, combine cheddar cheese, cream cheese, sour cream, hot sauce, and drained spinach. Mix all this together.

Once the mushrooms and onions are finished, add this to the cheese mixture.

Here is what the finished filling should look like.

Stuff the mushrooms with the oh so yummy mixture. Make sure you get plenty stuffed in these little babies! Pop this into a 375 oven for about 20-25 minutes. For the last 3 minutes turn on the broiler so the cheese gets nice and bubbly.

And here is the absolutely, unbelievably yummy finished product! These little guys were so good last night! You have to make sure you eat them right out of the oven to make the most of them. I was shocked just how good this recipe turned out because I was a little skeptical at first. If you like mushrooms even a little, this is definitely worth a try!

INGREDIENTS:

  • 2 packages of mushrooms
  • 1/2 yellow onion
  • 1 package frozen spinach
  • 1 cup 2% cheddar cheese
  • 1/3 low fat sour cream
  • 1 8oz package low fat cream cheese
  • 1/4 cup bread crumbs
  • 2 Tbsp butter
  • 1 Tbsp olive oil
  • 1 Tbsp hot sauce

DIRECTIONS:

Preheat oven to 375. Separate stems from mushrooms. Then in a hot pan melt butter in olive oil. Chop onion and mushroom stems then add to the pan. Reduce heat to medium. When the onions and mushrooms are done add in the breadcrumbs to the mixture. While this is cooking, mix together cream cheese, sour cream, cheddar cheese, drained spinach, and hot sauce. Make sure to drain the spinach very well. You can also adjust the amount of hot sauce to your taste. I thought 1 Tbsp wasn’t enough so next time I will add in more. To this bowl, add in the mushrooms and onions then mix everything together. Stuff the mushrooms with this mixture. Make sure to get plenty stuffed into the mushrooms. Bake for 20-25 minutes, turn to broil for the last few minutes. Enjoy!

High Five for Friday

Well, I’ve had a productive and busy week and am looking forward to enjoying the weekend! Here are the 5 highlights from my week!

1. One for the Money

I finally got to go see this movie with my best friend this week, and we loved it! It was a great chick flick. It didn’t get great reviews, but how can you go wrong with Katherine Heigl and 2 hot guys? I mean come on.

2. Getting a Pedicure

After we went to see One for the Money, we treated ourselves to pedicures! YAY! It was basically amazing. If I could afford to get a pedicure every week, I would.

3. Wearing Jeans 3 Days to Work!

I mean I can’t even describe to you how excited I get when I can wear jeans to school. It was basketball homecoming this week, so if we participated in the dress up days we could wear jeans. If you have to dress up for work everyday, then getting to wear jeans is the next best thing to a snow day, which by the way we’ve only had 2 this year!!! Craziness! Maybe, I should start a petition that we should wear jeans in place of each snow day we haven’t used, which would be 11 for the record.

4. Giants Winning the Super Bowl

I was glad to see Eli Manning and the Giants win the Super Bowl. There is just something about Tom Brady that I just really don’t like. I also like the Manning Family as a whole so pretty happy with the outcome.

5. Discovering the show Downtown Abbey

I have only watched the first show on Netflix so far, but I really like it. It reminds me a lot of Pride and Prejudice, so of course I’m going to like it.  The best part is Professor Mc Gonagall plays the matriarch of the family.

What I Wore Wednesday

I didn’t do a very good job getting outfit pictures this week. This is mainly do to the fact that I have been on a reading frenzy staying up way to late and sleeping in way to late in the morning. Thus, I have ran around like a crazy person almost every morning trying to get to school on time and not getting my daily outfit pictures. But, the show must go on!

I got these amazing trouser jeans at Gap a few weeks ago and they were a steal! They were originally priced at $80 (which I could never bring myself to pay for a pair of jeans) and ended up only paying $15! How crazy is that! I did have to get them hemmed because they were freakishly long, but even after that added cost I spent a total of $27! They are the most slimming pair of jeans I own which is always a plus!

Taco Soup

Last night, I decide I would make some yummy Taco Soup. It’s been a little drizzly outside so perfect soup weather. If you’ve never had Taco Soup before, you definitely need to give it a try. It’s sort of like chili but with a taco spin on it. It’s also soooo easy to make in the crock pot. I think it took me 15 minutes to throw this together.

Here’s what you will need:

hamburger, ranch packet, taco seasoning, black beans, kidney beans, chili beans, diced tomatos, tomato sauce, rotel, corn, onion (not pictured)

First, thing you need to do chop and saute half an onion. Then in the same skillet brown and drain your hamburger meat.

While you are cooking the meat, throw all the cans into a crock pot.

Once you’ve mixed that together, add in the ranch packet and taco seasoning. My favorite taco seasoning that I can’t live without is McCormick’s. I’m telling you it makes all the difference!

After the meat is done, add it to the crock pot and mix in.

Cook on high for 4 hours or low for 6 hours.

Serve this with a little shredded cheese and tortilla chips. Enjoy!
