Eating Healthy

 Here lately I have been eating a bunch of junk! I mean junk! For instance, this morning I had a mocha frappuccino, for lunch mexican food with LOTS of chips and salsa, and for dinner Lay’s chips and french onion dip. Yeah, it’s bad. So, as I was eating my millionth chip of the day, it hit me like ton of bricks that I’ve got to cut this out. One of my goals for my 25 while 25 list is to start eating better, so here we go!

I have tried several “diets” in the past and the only thing that has worked for me is the South Beach Diet. It basically consists of 3 phases where you start off on a very strict low carb regimen and over a period of time slowly add back in good carbs. At first, it is pretty tough to stick to and definitely feels like a “diet,” but over time if you stick with it it becomes second nature and isn’t like a “diet” at all.

Here are some of the things I am doing to help with my goal of eating better:

1. Pre-Packed Salads

So, for a very yummy and healthy lunch this week I made ahead salads ready to go. No work in the morning, just grab and go.

2. Cocoa Almonds

For my sweet tooth, I picked these amazing little guys up at Sam’s. They only have 1 gram of sugar per serving and are very filling.

3. Lots of Water

Most importantly, I will be downing water like crazy. No more diet Dr. Pepper’s or sweet teas for me!

The hardest part of the South Beach Diet for me is during the 1st phase finding things to eat for breakfast. I normally eat a big bowl of cereal or a banana, peanut butter, and honey sandwich (which, for the record, is the most amazing breakfast sandwhich ever!), however, this isn’t allowed in the beginning. The best thing to eat for breakfast during Phase 1 is some form of eggs. This means I have to plan on getting up early enough to make breakfast.

Okay, so for some odd reason, last night, while my husband and I were having a conversation, it suddenly hit me that I will be a quarter of a century old in less than 3 months! Yikes! Why is that 25 seems light years older than 24? Is 25 that magic number when you finally cross over into adulthood and leave the care free days of college in the past?

I have never had an impulsive need to make a list and accomplish everything on it, but in honor of this momentous occasion I’ve decided to start a list of 25 things to accomplish before/while I am 25. I am pretty much your poster child for procrastination, hence, the reason for the before/while 25:)

I also need to let you know that this list isn’t complete just yet, and I plan on adding to this list in the next few weeks. By the way, any suggestions are VERY welcome! Here’s what I’ve got so far in no particular order:

1. Run a half-marathon with one/both of my brothers (no pressure boys!)

2. Learn how to use our new grill

3. Run on the beach at sunset (yes, I realize this is cheezy, but oh so amazing)

4. Go parasailing

5. Make chicken and dressing from scratch that’s actually tasty

6. Make biscuits with chocolate gravy from scratch

7. Landscape our front yard without killing any plants in the process

8. Keep up with this blog

9. Make time to read a book every month

10. Change my last name- Okay, I feel like this needs some explanation for those of you who don’t know this story. I’m not pulling a Phoebe from FRIENDS and just changing my last name to whatever I feel like. I’ve been married for 4 years and still haven’t changed my maiden name. So, in the very near future, I will be changing my last name. Now back to the list…

11. Scream at the top of my lungs on a rollercaoster

12. Drink a butter beer at Harry Potter World

13. Clean and I mean CLEAN our house

14. Make a rag quilt

15. Eat healthy

16. Read the Bible cover to cover

17. Throw the best graduation party EVER for my husband

18. Buy a DSLR camera

19. Put up Christmas lights on our house

20. …

Okay, I am all out of ideas for now and again suggestions are welcome. I do plan on finishing this list and updating you on my progress.
