Easter Sunday Fun

Well, now that all the Easter fun is over, and I am extremely uncomfortable from all the food I devoured, I figured I would share some of my family’s Easter pictures taken with my amazing new Canon!!

My family got to come up for church and lunch, so it was nice having them come up for a visit. The only sad part was my Matt Matt was sick and other brother had to write a 10 page paper for one of his college classes, so they weren’t able to make it:(

After, they headed home Logan had to study for his nursing test tomorrow, and little Jack took it upon himself to be his study buddy.

So, poor little Jack has been subjected to a million pictures since I brought home my new camera Thursday. I think he might be getting tired of it all, but do you see how cute that kid is?! Also, notice how he has his little paws tucked over each other, so sweet. He sits like this all the time.

Easter Sunday Recipes- Austin’s Hashbrown Casserole

This is one of my brother’s favorite all-time recipes, hasbrown casserole. I think he would eat it 3 times a day everyday for the rest of time. I will admit, it is pretty amazing.

Here’s what you will need:

hashbrowns, cream of chicken soup, butter, shredded cheddar cheese, onion, sour cream, salt, and pepper

So, ignore the milk and pretend it is an onion. My bad…

In a huge GINORMOUS mixing bowl, combine a 2lb bag of frozen hasbrowns, 1/4 cup chopped onion, 2 cups shredded cheese, 1 pint sour cream, cream of chicken soup, and 1/2 cup melted butter. Also, add in a little salt and pepper to taste.

Mix all this yumminess together.

Pour this into a large baking dish. If you want, you could add some shredded cheddar cheese to the top to make it even more yummy.

Bake this at 350 for 45 minutes. ENJOY!!

P.S. If you are concerned about the calories you are about to intake, don’t! It’s Easter, the last time you had a good excuse to eat all sorts of yumminess was Christmas. You can get carried away every now and then, and it doesn’t count!

INGREDIENTS:

  • 2lbs frozen hashbrowns (The cubes are better than the shreds.)
  • 1 can cream of chicken soup
  • 2 cup shredded cheddar cheese
  • 1/2 cup melted butter
  • 1 pint sour cream
  • 1/4 cup chopped onion
  • salt and pepper to taste

DIRECTIONS:

In a large mixing bowl, combine all ingredients and mix together well. Then, pour into a large baking dish. Cook at 350 for 45 minutes.

Easter Sunday Recipes-Squash Casserole

Next favorite recipe of mine is squash casserole. Ok, I know, I know you are asking yourself “Did she say squash casserole?” But trust me on this one, it is amazing! This is one thing that my husband just couldn’t quite believe was good when we started dating, but it has grown on him.

Here is what you will need:

frozen squash, milk, bread crumbs, onion, egg, butter, and shredded cheddar cheese

Saute squash with the diced onion.When the squash has finished cooking, drain off any liquid.

Once the squash is finished, in a large bowl combine squash, cheddar cheese, egg, bread crumbs, butter, and milk. I would melt the butter before I added it into the mix. Also, save a little bit of the bread crumbs to sprinkle on the top before baking.

Pour this into a casserole dish that you have sprayed with Pam. Sprinkle about 1/4 a cup of bread crumbs on the top and cook for 20-25 minutes at 400.

ENJOY!!

INGREDIENTS:

  • 2lbs frozen or fresh squash
  • 1 cup bread crumbs (3/4 cup for casserole, 1/4 cup for top)
  • 1/4 cup onions
  • 1 cup cheddar cheese
  • 1 egg
  • 3 Tbsp butter

DIRECTIONS:

Cook the squash and onion, then drain off any excess liquid. In a large mixing bowl, combine squash, cheese, egg, bread crumbs, and melted butter. Then, place this in a casserole dish and sprinkle the remaining bread crumbs over the top. Bake this at 400 for 20-25 minutes.

 


Easter Sunday Recipes-Broccoli Casserole

Tomorrow is Easter Sunday, so tonight I’ve been getting a bunch of things ready to just pop in the oven tomorrow after church. I thought it would be fun to share some of my favorite family recipes that are always on hand when we get together. I love finding out what recipes families have to make for special occasions. When my husband and I started dating, he had never heard of, let alone ate, some of the things that I thought everyone made. These are actually some of those recipes that I introduced him to.

First up is one of my personal favorites and that is broccoli casserole. I actually hated this recipe as a child and now crave it on a regular basis. This is also a super quick and easy recipe to throw together the night before you cook it.  Here’s what you will need:

Minute rice, milk, cream of mushroom soup, chopped broccoli, shredded cheddar cheese, butter

Cook and drain broccoli until fork tender.

In a bowl mix together cheese, rice, cream of mushroom soup, and butter. I usually melt the butter before I throw it in the bowl.

Once the broccoli is ready, add that to the bowl and mix everything together well.

Now, pour this into a casserole dish. Make sure you spray the dish with Pam for easy clean up later. Bake at 350 for 30-35 minutes.

Cook and drain broccoli until fork tender. In a large bowl, mix cheese, cream of mushroom soup, butter, and rice. Once the broccoli is done, add this to the bowl and mix everything together well. Pour this into a casserole dish and bake at 350 for 30-35 minutes.
