Cinnamon Bun Popcorn

Tomorrow Logan and I are heading home for Christmas! Yay! In preparation, we have been running around like crazy all day:) Cleaning, packing, and most importantly cooking. I decided to share this recipe for Cinnamon Bun Popcorn with you.

Here’s what you will need:

 

Popcorn, Karo syrup, butter, vanilla, baking soda, brown sugar, cinnamon, pecans

 First up, pop 2 bags of popcorn. I used a light butter popcorn. I like sweet with a little salty, so the butter was fine with me.

Brown sugar and cinnamon

While the popcorn is popping up, mix together 1 cup of brown sugar and 1 tsp of cinnamon.

Then, slice 1 stick of butter on top of the brown sugar and cinnamon.

Last thing to add in is 1/4 cup of Karo syrup. This makes a mess watch out! This will need to be microwaved for about 30 seconds to get it started. Take it out and stir, then back in the microwave for another 2 minutes.

Whisking away!

Make sure everything is melted together. Here you need to add 1 tsp of vanilla and 1/2 tsp of baking soda. Then whisk away some more.

Now that you have all the popcorn popped and the brown sugar cinnamon mixture ready to go, I would put the popcorn into 2 large mixing bowls. You also need to throw the chopped pecans in with the popcorn. I used 1/2 a cup, but you could use up to 1 cup of pecans.

Here comes the fun part, mixing everything together! Pour the brown sugar cinnamon mixture on top of the popcorn.

Logan's genius idea

Right before I made a huge mess, Logan came up with a great way to mix everything together in an orderly fashion. Place aluminum foil over your bowls and shake away, mess free! He is pretty good to keep around:)

Once everything is mixed together, place on a baking sheet lined with aluminum foil. Pop into a 250 degree oven for 30 minutes. You will need to toss everything around every 10 minutes.

Finished Product!

After it has baked for 30 minutes, let the popcorn cool on wax paper. You also can drizzle melted white chocolate on top of the popcorn while it is cooling. (This was my plan, but I burnt the white chocolate…bummer.)

 I have enjoyed making lots of goodies to take home with us, but glad to be done:) Hope everyone is ready for Santa to come!

  • 1/2 cup chopped pecans
  • 1 stick of butter
  • 1/4 cup Karo Syrup
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1/2 tsp baking soda
  • white chocolate chips for drizzle (optional)

DIRECTIONS:

Preheat oven to 250. Pop 2 bags of popcorn in the microwave. While the popcorn is popping, mix together brown sugar and cinnamon. Then, slice the butter into pieces and pour the Karo syrup on top of the brown sugar and cinnamon. Place this into the microwave for 30 seconds, stir, place back into the microwave for another 2 minutes, and whisk together thoroughly. Now, add in baking soda and vanilla, whisk. Separate the bags of popcorn into 2 large mixing bowls with the chopped pecans. Last, pour the brown sugar and cinnamon mixture on top of the popcorn and pecans. Mix well. Place this on a baking sheet lined with aluminum foil. Bake for 30 minutes, tossing every 10 minutes. When finished, place on wax paper to cool. This is when you can drizzle white chocolate on top. Enjoy!
